Watermelon Spritzers

It’s Friday and there’s no better way to celebrate the start of another sunny weekend than with a watermelon spritzer. You can pretty much consider it a healthy fruit juice.

Makes 8 cocktails

Ingredients

3 cups of watermelon

1 cup simple syrup

1/2 cup lemon juice

1/2 cup lime juice

1 liter club soda

mint sprigs for garnish

Vodka (optional)

Put the cubed watermelon into a food processor or blender. Blend until it becomes a liquid (about 30 seconds). Pour the liquid into a sieve to strain the pulp. Don’t have a sieve? No need to strain – your spritzer will have some pulp (#healthy!). Pour the watermelon juice into a pitcher. Add the simple syrup, lemon and lime juice and club soda. Stir. Refrigerate until cold. Serve with an ounce of vodka, a sprig of mint and a watermelon wedge to make it a snack-tail.
